Vietnamese Cuisine
Talk/Demonstration by Hieu Trung Bui
Tuesday 29 May at Asia House
Doors 6.30pm, Event 6.45-7.45pm
Followed by reception

Asia House presents a series of events to coincide with the exhibition No
More War! Tran Trung Tin: Vietnam's Optimistic Tragedy, showing in the
gallery until 23 June 2007. Hieu Trung Bui runs Cay Tre Vietnamese
Kitchen (‘...a wondrous Vietnamese café in Hoxton..’ Jay Rayner, The
Observer), and Viet Grill, both serving delicious Vietnamese food such
as the traditional dish Ha Noi Cha Ca La Vong - fish grilled on a charcoal
clay brazier with galangal, saffron, chives, dill, shrimp sauce, fried peanuts
and pickled vegetables - and arguably the best Pho (traditional rice noodle
soup) in London.

Hieu will talk about what makes Vietnamese food special and distinct from
that of neighbouring countries. By introducing key ingredients and dishes,
he will describe the uniqueness of style that creates this distinction: the use
of fish sauces rather than soy; the ubiquity of rice noodles; and the proliferation
of fresh green herbs, a direct influence of French colonial rule. Cay Tre’s
chef will demonstrate how to make La Vong grilled fish and this will be
followed by a food tasting.

Asia House members receive a 20% discount on their final food bill at Viet
Grill throughout May and June, 2007. Please see Members’ Benefits at the
back of this programme.
